[NEWS] Chanyee Hotel Day Builds First Michelin Restaurant in Kaohsiung

In the midst of the epidemic, the Chanyee Hotel Day Cultural Tourism Group announced to open the Papillon, a 5-star restaurant which will be located on the 26th floor of the Chanyee Hotel in Kaohsiung. French Michelin two-star chef Xavier Boyer, who was trained by world famous chef Joel Robuchon, will be the director of the Papillon to create a Michelin grade high-end restaurant combined with local customs. The Hotel Day has invested $1 billion NTD in the Papillon, which is expected to open at the same time as the Chanyee Hotel in early 2022.


Dai Junlang, founder of the Chanyee Hotel Day Cultural Tourism Group, said that the Chanyee Hotel Day will combine international high-end catering with representative local customs. Also, by collaborating with Xavier Boyer, multiple-time Michelin star winner, he believes the Papillon will brighten the catering industry in Kaohsiung.


Xavier Boyer, 41, was born in France. He received his first Michelin recognition at the age of 27, his 2nd at the age of 30, and many more ever since. He was hired as the chef of the Gaddi’s Restaurant under the Peninsula Hotel in Hong Kong. Now he is going to be the chief chef of the Papillon, a Michelin restaurant of the Chanyee Hotel Day in Kaohsiung. In addition to the culinary design and training of the culinary team, Boyer will participate in the planning of the tableware as well as the selection of ingredients. It is expected that there will be 40 seats and 2 independent booths planned on the 26th floor of the Chanyee Hotel restaurant where a set menu will be served with Taiwanese tea and house special wine to meet the expectations of Taiwanese gourmets.



The Chanyee Hotel Day Cultural Tourism Group and Kaohsiung Bureau of Cultural Affairs jointly built a five-star cultural and creative hotel, the Chanyee Hotel, which is connected with the Kaohsiung Main Public Library. The hotel has the one and only 50-meter transparent infinity pool in Taiwan where visitors could enjoy the city landscape and the sunset of Siziwan Bay from the 24th floor. In addition to the Michelin restaurant, there are also theme restaurants, gym, spa, Kaohsiung’s exclusive open-air panoramic bar, tea shop, bookstore, wine library, and large banquet halls. The hotel is also designed with 230 rooms and will begin its trial operation in early 2022.
